It was an Easter dinner party with no dessert. My mind began scrambling for ideas. Carrot cake? No, too common. Homemade Peeps? No, not sophisticated enough, and besides, I didn’t have time to make and mold the marshmallows by hand.
Then it dawned on me: I could make SNICKERDOODLE CAKE!
Tasked with coming up with a new dish to bring business back to Valhalla’s Wok Bayou, I created this Amazing Enchilada Lasagna. A casserole filled with the flavors of Mexico but served in the style of an Italian lasagna. It was brilliant. Our customers thought so too, and soon everyone in the area was flocking back.
This recipe is from my great, great, great, great, great, great, great, great, great, great grandfather, who sailed with Marco Polo on his return trip from China to Italy.
