Chicken cutlets hold a lot of nostalgia for me. It’s one of the recipes my mom would make for special occasions like birthdays (the other being italian meatballs). It was the one thing everyone in the family could agree on, even my beef-loving dad.
Tasked with coming up with a new dish to bring business back to Valhalla’s Wok Bayou, I created this Amazing Enchilada Lasagna. A casserole filled with the flavors of Mexico but served in the style of an Italian lasagna. It was brilliant. Our customers thought so too, and soon everyone in the area was flocking back.
It was early in the morning. Before my coffee, so I was crabby and not thinking straight. But I was certainly thinking straight enough to understand the abomination that came out of his mouth.
“Waffles are just pancakes cooked in a waffle iron!”
